Tomato Basil Bisque from Home-Canned Tomatoes
This delicious tomato basil bisque is perfect paired with grilled cheese sandwiches on cold or rainy days. Best of all, it’s a great use of home-canned stewed tomatoes, bringing back memories of the warm summer sun on the dreariest of days!
Ingredients
- 1 quart canned stewed tomatoes
- 1/2 cup butter
- 1/3 cup all-purpose flour
- 2 cups milk
- 2 cubes beef bouillon
- 1 tablespoon white sugar
- 1 teaspoon salt
- 1 bay leaf
- 1/4 teaspoons dried basil
- 1/4 teaspoon black pepper
Directions
- Blend the canned stew tomatoes, using an immersion blender or blender.
- In a medium saucepan over medium heat, melt the butter. Whisk in the flour to form a roux, whisking for 1 minute.
- Slowly add the milk to the roux, whisking constantly until thickened. Stir in blended tomatoes. Add beef bouillon, sugar, salt, bay leaf, basil, and black pepper.
- Simmer for 20 minutes.
