Tomato Basil Bisque from Home-Canned Tomatoes

This delicious tomato basil bisque is perfect paired with grilled cheese sandwiches on cold or rainy days. Best of all, it’s a great use of home-canned stewed tomatoes, bringing back memories of the warm summer sun on the dreariest of days!

Ingredients

  • 1 quart canned stewed tomatoes
  • 1/2 cup butter
  • 1/3 cup all-purpose flour
  • 2 cups milk
  • 2 cubes beef bouillon
  • 1 tablespoon white sugar
  • 1 teaspoon salt
  • 1 bay leaf
  • 1/4 teaspoons dried basil
  • 1/4 teaspoon black pepper

Directions

  1. Blend the canned stew tomatoes, using an immersion blender or blender.
  2. In a medium saucepan over medium heat, melt the butter. Whisk in the flour to form a roux, whisking for 1 minute.
  3. Slowly add the milk to the roux, whisking constantly until thickened. Stir in blended tomatoes. Add beef bouillon, sugar, salt, bay leaf, basil, and black pepper.
  4. Simmer for 20 minutes.
