Crockpot Kale, Ham, and Potato Chowder
Kale is currently the most abundant vegetable growing in our garden, so we’re trying to come up with creative ways to use it every week. This kale, ham, and potato chowder is so delicious we’re definitely looking forward to leftovers!
Crockpot Kale, Ham, and Potato Chowder
3 ½ cups potatoes, peeled and diced
⅓ cup diced celery
3 cups chopped kale
¾ cup diced ham
3 ¼ cups water
2 tablespoons chicken bouillon
2 teaspoons thyme
½ teaspoon salt
1 teaspoon pepper
1/2 cup butter
5 tablespoons flour
2 cups milk
Directions:
- Put potatoes, celery, onion, kale*, onion, ham, water, bouillon, thyme, salt, and pepper in a crockpot on low setting for 6 hours or on high for 3-4 hours.
- Just before serving, melt butter in a saucepan over medium-low heat. Whisk in flour, stirring constantly for about 1 minute, or until thick. Continue whisking while gradually adding milk. Allow to thicken for 4-5 minutes, stirring constantly.
- Pour the milk mixture into the crockpot. Stir until fully incorporated. Now it’s ready to serve!
*we intended to put the kale in the crockpot with the other ingredients (as it was the reason for the soup), but we forgot until almost dinner time. We improvised by sautéing the kale and adding it in just before the milk mixture.
