Hands-On 2-Day Pig Processing Workshop!

Are you ready to learn the art of pig processing in a supportive, small-group setting? Over the course of two immersive days, James and Audra Holmes will guide you through every step of processing your own pig. This workshop is perfect for beginners and includes all the materials you’ll need. By the end of Day 2, you’ll leave with your meat cut, packaged, and ready for your freezer—or dinner!

What to Expect

Day 1: From Field to Primal Cuts

  • Learn humane culling techniques.
  • Master the steps of skinning, eviscerating, and breaking down the carcass into manageable primal cuts.
  • Primal cuts will be safely stored on ice overnight.

Day 2: Transforming Primal Cuts into Meals

  • Take your primals and process them into meal-ready portions like roasts, ribs, loins, and sausage.
  • We will not be curing bacon or ham, but you will go home with these cuts and can cure them on your own if you would like.

Ticket Details

Each ticket is for one pig and up to two people. Bring a family member or a friend to share the work, knowledge, and meat! 

About the Pigs

We’ll process KuneKune pigs born right here on our farm in March 2024. These smaller, pasture-raised pigs are ideal for beginners, offering a manageable introduction into processing.  They are also a lard breed, meaning you will be able to take home their fat to render and use in cooking, soap making, lotion, etc.   The skills you gain in this workshop are easily transferable to larger pigs, deer, goats, and even cattle.

 Additional Details

  • Lunch: To keep things moving, lunch is not provided. Feel free to bring your own snacks and drinks.
  • Timing: We expect to finish by early to mid-afternoon each day.
  • Weather: This is a rain-or-shine event, with portions held outdoors. Please dress appropriately for the weather and wear comfortable clothing you don’t mind getting messy.
